Baingan bharta is a delicious, simple curry recipe from ethnic Punjabi cuisine. This Indian side dish has a very ethnic and yummy flavor that goes well with chapatti, bajra roti or tandoori roti. You can make for your friends, guests or family members. It’s a perfect side dish with roti, when you have guests for a meal.

Normally, it is roasted in tandoor for a proper aromatic charcoal flavor. But it is not possible in nowadays, because everyone have not charcoal based tandoor in their kitchen. Thus as a result, you can use your oven for this type of flavor. Ingredients, used in these recipes are very simple and easily available in every kitchen. So you can make it any time without any hesitation.

Ingredients for Baingan Bharta:
1 Kg Brinjals (Roasted on open flame and without skin).
100 gm Spring Onions.
100 gm Red Onions.
Some Fresh Coriander Leaves.
200 gm Chopped Tomatoes.
10 Chopped Hot Green Chillies.
1 inch Finely Chopped Ginger.
1 tsp Cumin Seeds.
1 tbsp Red Chilli Powder.
1 tsp Coriander and Cumin Seeds Powder.
½ tsp Hing or Asafoetida.
Salt to taste.
5 tbsp Oil.
How to Make Baingan Bharta:
Step 1.
Make a hole in all the Brinjals at the bottom with knife, Roast all the brinjals on open flame till it became soft. Remove the skin and cut it into the small pieces.

Step 2.
Heat oil in pan then add cumin seeds, when cumin seeds started popping add spring onions and red onions, saute it well for 2-3 minutes.

Step 3.
After 2 minutes add ginger, green chillies and tomatoes, mix it well and cook it for few seconds.

Step 4.
Now add salt and mix well, now add hing or asafoetida, red chilli powder and mix it well, when all the veggies get cooked add smoky and open flame roasted brinjals and mix well.

Step 5.
Now add little bit of coriander and cumin seeds powder and let it simmer for just 1 minute, after 1 minute turn the heat off and add coriander leaves in it and mix it nicely.
Delicious gujarati style baingan bharta is ready, serve it bajre ka rotla or millet flour bread or chapatti and enjoy.
