Baingan Masala Recipe | Restaurant Style.

Baingan masala is a very delicious and tempting Indian curry recipe which has a very unique and special kind of taste. Mainly it is prepared from brinjals, groundnuts, tomatoes and lots of spices. Cooking level of this rich flavored gravy is easy and requires few minutes to cook is well. In this quick masala Baingan first the stuffing is prepared than gravy. It’s a bit spicy simply lip smacking curry which you can serve with roti, phulka or rotla (Millet Flour Bread).

In gujarat this curry is usually served with rotla and it comes out really very awesome, I personally like to prefer it with rotla. Usually brinjal curries are not liked by most but once you try this spicy and fully masala Baingan dish than I must say you will be fan of it. This is one best curry to make for lunch or dinner, with being fabulous in taste it is also very healthy and nutritious is well.

One thing you have to remember is that buy only small baby brinjals for making this yum Baingan masala. Ingredients for Baingan Masala:

For Stuffing:

100 gm Groundnuts.
2 tsp Red Chilli Powder.
½ tsp Asafetida.
Some Fresh Chopped Coriander Leaves.
5 cloves of Garlic.
1 inch Ginger.
½ tsp Cumin Seeds.
½ tsp Mustard Seeds.
Salt to taste.

For Gravy:

15 Small Brinjals.
1 Medium Size Chopped Tomato.
½ tsp Turmeric Powder.
2 tbsp oil.

How to Make Baingan Masala:

Step 1.

First of all roast the groundnuts for little time at medium low heat, once you see black spots on them take out in plate and let it cool.

Step 2.

Now take one mixture jar add in roasted groundnuts, chopped ginger, garlic, coriander leaves, 1 tsp red chilli powder, ¼ tsp asafoetida, 1 tsp cumin seeds, salt and little water.
Now blend it and make nice mixture of all the spices and take out in a bowl, stuffing is ready. (It should be crumbly grinded and not polished).

Step 3.

Now make a vertical cut in all the brinjals to make space for stuffing, now stuff all the brinjals with spice mixture or stuffing and keep aside, save half of the stuffing for gravy.

Step 4.

Now heat oil in kadai or pan, add in mustard deeds, cumin seeds and cook it little, when it start crackling put tomatoes in and cook it little, now add in stuffing mixture and mix well which was saved in Step-3 above.

Step 5.

Now add in turmeric powder, red chilli powder, salt and mix well, cook it for further few minutes.
Now add in stuffed brinjals and mix well with all the spices and cook for couple of minutes. Then add around 1 glass of water and cook it till all the water evaporated.

Step 6.

Now take out the Baingan masala in serving plate and serve with roti or rotla and enjoy.
