Bhel sanchori is a very unique and special street food recipe which belongs to gujarati cuisine. It looks very similar to ghughara (Gujarati Snack Food) but slightly different in taste as well as making. Mainly it is prepared from all purpose flour dough for outer layer, puffed rice, onions, tomatoes, cucumber, besan sev, masala peanuts and some other spices. In this bhel recipe first of all dry bhel is prepared then it is stuffed in puris made from dough and deep fried.

Ingredients for Bhel Sanchori:

½ Cup Kneaded All Purpose Flour Dough.
½ Cup Mamra or Puffed Rice.
3 tbsp Besan Sev.
1 tbsp Finely Chopped Onions.
1 tbsp Finely Chopped Cucumber.
1 tbsp Finely Chopped Tomatoes.
1 tbsp Finely Chopped Coriander Leaves.
1 tbsp Masala Peanuts.
1 tsp Chaat Masala.
½ tsp Lemon Juice.
Rock Salt as per taste.
1 tbsp Sweet Chutney.
1 tbsp Green Chutney.

For Garnishing:

Sweet Chutney.
Some Pomegranate Grains.
Green Chutney.
Some Besan Sev.
Some Finely Chopped Onions.

How to Make Bhel Sanchori:

Step 1.

First of all take a deep utensil then put puffed rice or mamra, besan sev, onions, cucumber, coriander leaves, tomatoes and masala peanuts in it and mix well.

Step 2.

Now add in chaat masala, rock salt, sweet chutney, green chutney, lemon juice and mix the bhel well, bhel is ready.

Step 3.

Now make small balls from kneaded dough and roll them out in small size of puris then take one puri and put some bhel at centre then put another puri on it.

Step 4.

Now press it gently and give shape of kachori then fold the edges slightly and give nice impression to it, make all the bhel sanchoris ready similarly.

Step 5.

Now heat oil in a kadai, when oil gets heated put bhel sanchoris in and fry till become nice golden brown then take out in a plate and let them cool for few minutes.

Step 6.

Now make small hole at centre of sanchoris then put some sweet chutney, green chutney, finely chopped onions, pomegranate grains, besan sev in it and serve.
