Buff Vada Recipe | Potato Dumplings | Poatato Patties Recipe.

Buff vada is one of the very delicious Indian fast food recipe from well known gujarati cuisine. It is specially prepared during the Krishna Janmashtmi festival but for that some of the ingredients are not used which we used in this recipe. Mainly it is prepared from boiled potatoes, roasted peanuts, sesame seeds, fennel seeds, cashew nuts, almonds and some other spices. For making this yummy and delicious potato dumplings stuffing and outer layer both are separately prepared.

After preparing stuffing and dough for outer layer, dough is rolled out like a puri and from stuffing small sizes of balls are made and stuffed in puri. Then after sealed nicely and deep fried in hot oil and the quick buff vada are ready to serve. This tasty vadas goes good with jaggery tamarind chutney but you can also serve with any other chutney of your choice. With being delicious this buff potato patties are also very healthy is well.

All the required ingredients to make this recipe are very simple and commonly available in grocery shops and markets. Ingredients for Buff Vada:

For Stuffing:

1 tbsp Boiled Potatoes.
1 tbsp Roasted Peanuts.
1 tbsp Roasted Sesame Seeds.
1 tbsp Roasted Fennel Seeds.
1 tbsp Cashew Nuts.
1 tbsp Almonds.
1 tbsp Raisins.
1 tbsp Ginger Chilli Paste.
1 tbsp Powdered Sugar.
1 tbsp Desiccated Dry Coconut.
1 tsp Lemon Juice.
1 tbsp Coriander Leaves.
Salt According to taste.

For Outer Layer:

3 Big Boiled Potatoes.
4 tsp Tapkir or Corn Flour.
Salt According to Taste.
Oil for Frying.

How to Make Buff Vada:

Step 1.

First of all smash the 3 big boiled potatoes and put in a bowl then add in salt as per taste along with corn flour and mix well to make dough from it.

Step 2.

Now for making stuffing first of all take a mixer jar and add in roasted peanuts, sesame seeds, fennel seeds, cashew nuts, almonds and grind them coarsely then take out in a bowl.

 Step 3.

Now add in boiled potatoes, salt, lemon juice, ginger chilli paste, powdered sugar, coriander leaves, raisins, dry coconut and mix all the ingredients well and make stuffing from it then make small balls from stuffing.

Step 4.

Now take little dough and roll out small like a puri then put one stuffing balls at centre and seal it nicely, make all the buff vadas ready this way then roll on tapkir flour or corn flour.

Step 5.

Now heat oil in a kadai, when oil gets heated put vada in oil for frying and fry till become light golden brown then take out in a serving plate and serve with jaggery tamarind chutney and enjoy.
