Chirote Recipe Step by Step.

Chirote is a savory snack oftenly made during festive seasons like diwali, Holi, navratri etc…… it is breakfast or midnight snack that is made from plain flour, ghee and milk. Sometimes, sooji is to be added for crispier version. This Namkeen chirote comes from Maharashtra and Karnataka where, it is usually served at any special occasion or any religious festivals.

Sometimes, it is also to be called chiroti. This crispy, shattery chirote has two types of versions. One is Namkeen version and second is sweetened version. Here, I made Namkeen version which is served as a snack or as a breakfast dish with hot cup of tea. It will appear quite complicated process for beginner cook but after following our simple step by step photos, you will get much easier task to make this easy Namkeen chirote.

It is prepared by stack three or four roti from kneaded dough, which is made from plain flour, rice flour, milk and ghee. This stack of rotis is being smeared by the paste of rice flour and ghee. Then rolled up and cut in to ½” thick piece and rolled out. The rolled out pieces are fried into heated oil and it is ready to serve.

It is optimal for lunch box and it will definitely make your picnic to be shine by taking with. And yeah!!… Last but not the least let me warn you that you will not be able to resist yourself after seeing this appetizing snack. Ingredients for Chirote Recipe:

3 Cups Fine Semolina or Sooji.
2 Cups All Purpose Flour or Maida.
Salt as Per Required.
1 Cup Ghee (You can also use Dalda).
½ Cup Butter.
1 Cup Milk.
1 Cup Rice Flour.
Ghee for Frying (you can use oil also).

How to Make Chirote Recipe:

Step 1.

Take a large mixing bowl, add sooji, maida and salt mix it well then add ½ cup hot ghee and butter. (Note-Ghee must be hot then only we get crispy light chirotes)

Step 2.

Now add milk slowly and make dough if necessary then add water and keep dough aside for 2 hours then make medium dough balls.

Step 3.

Take another bowl whisk together the rest of ghee and rice flour and make a paste.
Now roll out the each dough balls into medium sized rotis, each roti must be very thin (We need 3 rotis to make 1 chirote).

Step 4.

Take 1 roti grease the rice flour paste on top side and spread the second roti, grease this second roti on its top side again and then add the last roti.
Now add a final greasing with the rice flour paste to the arranged rotis.

Step 5.

Now roll the arranged roti structure into a tight roll very gently (Do not pat the roll or flatten with your hand either the air gets pressed and chirote will not fluffy).

Step 6.

Now cut the rolls into 1 inch thick disks, each disk will have spiral inside.
Heat a deep frying pan with ghee, deep fry the chirote until golden brown and crispy.

Step 7.

Take away the fried chirotes in a tissue paper so that the excess ghee is soaked out and serve hot and enjoy.
