Cucumber Cake Recipe | Easy Sweet.

                                    We all have heard about lots of cakes and barfi, but have you ever heard about cucumber cake or barfi?… yes, you heard right. Today, we will learn how to make cucumber barfi which is also known as cucumber cake. It is a yummy and lavish looking Indian sweet recipe which is made from cucumber.  Usually sweet recipes are freezed or baked, but this cucumber cake is steamed in steamer.

                                       It is mainly made from cucumber, semolina, jaggery, coconut and other ingredients. All the ingredients used in this dish are commonly available at every market or stores. This unique and relishale barfi can be served at a parties or any special occasions. If you want to try something different then I must say that you should try this barfi once. You can also take this dessert with your meal. With this you can also check another unique recipe like guava cheese bars, Aam cheese rolls and Quick mango cake.

Ingredients for Cucumber Cake:

2 Cups Grated Cucumber.
1 ½ Cup Semolina.
1 ½ Cup Jaggery.
¾ Cup Grated Fresh Coconut.
4 Green Cardamoms.
¼ tsp Cumin Powder.
3 tbsp Chopped Cashews (Optional).
½ tsp Butter for greasing the pan.

How to Make Cucumber Cake:

Step 1.

First of all roast the semolina till it will get pink colour and fragrant, once done keep aside.
Take green cardamom in mortar-pestle and powder them.

Step 2.

Now slice the cucumber and remove the seeds, if you are using regular cucumber then no need to remove the seeds, grate the cucumber and keep aside.
A lot of the cucumber juice will be collected in the bowl or in the plate, just add this to the batter.

Step 3.

In a bowl take roasted semolina, mix in the grated cucumber along with its juice, grated coconut, chopped cashews, powdered jaggery, cardamom powder and cumin powder.

Step 4.

Mix the batter very well without any lumps, the batter has a medium consistency and is neither too thick nor thin, depending on the consistency of the batter you can add a few tbsp of milk or coconut milk.

Step 5.

Now heat about 3 ½ cups water in idli steamer, grease the pan with coconut oil, pour the batter in the pan, place the pan in the steamer, cover the steamer with its lead.

Step 6.

Steam for 30-40 minutes until a knife inserted comes out clean, when the cucumber cake become warm or is cooked completely, then slice and serve.
