Dahi tadka with stuff brinjal is basically south Indian curry which is scrumptious and yummy in taste. This is extremely simple and easy to make Indian curry which you can make for your lunch and dinner. For making this yummy tummy and healthy curry you have to choose small baby brinjals or eggplants as they taste more delicious than big once. Mainly it is prepared from small brinjals, whipped curd and lots of spices which makes everyone mouthwatering.

If you don’t like brinjals then also if you once make this quick dahi tadka with stuffed brinjal then you’ll goanna love this. There are very few recipes of brinjals but this one is favourite mine and we oftenly cook this at our home. It goes really good with simple roti, chapatti or fulka but you can also have this with any other breads of your choice. For making this first spices mixture is prepared and stuffed into baby brijals then cooked with oil and some spices. And tadka is separately prepared from curd and some spices finally both are assembled together and served.

All the required ingredients to make this Indian vegetarian curry are very simple and commonly available which is a good thing about it. With being super delicious this stuffed brinjal curry is also very healthy and nutritious. Along with this you may also do check some other brinjal recipes like Baingan Bharta, bharva Baingan, Baingan masala and much more. 

Ingredients for Dahi Tadka With Stuff Brinjal:

250 gm Small Brinjals.
2 tbsp Coriander Powder.
1 tsp Turmeric Powder.
4-5 Garlic Cloves.
Salt according to taste.
1 tsp Red Chilli Powder.
2 tsp Sugar.
1 tsp Celery or Ajwain.
2 tsp Oil.
3-4 tbsp Oil for Gravy.

Ingredients for Tadka Dahi:

3-4 tbsp Whipped Curd.
1 tsp Sugar.
2 tsp Oil.
1 tsp Cumin Seeds.
1 Finely Chopped Green Chilli.
5-6 Curry Leaves.
2 Pinch of Salt.

How to Make Dahi Tadka with Stuff Brinjal:

Step 1.

First of all for making stuffing for brinjals, take one mixture jar, put coriander powder, celery or ajwain, turmeric powder, salt, red chilli powder, garlic cloves, sugar and oil in jar.
Now grind all the spices and ingredients till get nicely mixed, stuffing mixture is ready keep aside.

Step 2.

Now wash brinjals, wipe with clean cloth and with the help of knife make 4 cuts in all the brinjals then stuff the spices mixture in the space, press the mixture with soft hands so it will stuck nicely.

Step 3.

Now put all the brinjals in pan then add in oil, cover and cook brinjals at medium low heat till become soft, stir in between after every minute, when brinjals become soft and cooked nicely turn the heat off and keep aside.

Step 4.

For making dahi tadka heat oil in pan, when oil become hot add cumin seeds and wait till it stats slathering, now add in green chillies, curry leaves and turn the heat off, tadka is ready.

Step 5.

Now put whipped curd in a bowl then add in sugar and mix well, now add in 2 pinch of salt again mix it well, now add in tadka and mix well, tadka dahi is ready.

Step 6.

Now finally take a serving plate, put tadka dahi first then put stuff brinjals on it and serve hot.
