Gujarati Sandwich Dhokla Recipe.

Gujarati Sandwich dhokla is savory snack item comes from western Indian state Gujarat. It is a mouth watering variant of dhoklas. There are lots of verities of dhoklas especially in Gujarat. Whereas dhokla is made from rice and chickpea, sandwich dhokla is made from rice and white lentils (urad dal).

Usually, it is made from fermented better of rice and urad dal for overnight or 5-6 hours. Green chutney is added between two layers of white, spongy dhoklas. For the enhancement, tempered spices are poured on the top. It is as easy as another dhoklas. There are lots of famous farshan shops that serve the best sandwich dhoklas in many famous cities of Gujarat.

Now a day, people demand for more verities and creation of traditional food, definitely, it will be a perfect variant for them. It is a quite same recipe to south Indian idli. So, if you have made idli one day and some better left over, then you can make this sandwich dhokla from the better.

Ingredients for Gujarati Sandwich Dhokla:

500 gm Dhokla Batter (Made from 2 cup Rice and urad dal).
1 Cup Coarsely Crushed and Boiled Green Peas.
2 tbsp Finely Chopped Onions.
Some Coriander Leaves.
1 tsp Turmeric Powder.
1 tsp Red Chilli Powder.
1 tsp Garam Masala.
1 tbsp Chilli Ginger Paste.
2 tsp Sugar.
2 tsp Eno Fruit Salt.
Salt to Taste.
3 tbsp Oil.

How to Make Stuffing for Sandwich Dhokla:

Step 1.

First of all heat 2 tbsp oil and saute onions properly then add chilli ginger paste, again saute it properly.
Now add green peas, salt to taste, red chilli powder, garam masala, coriander leaves and sugar, mix all the ingredients very well, cook it for few minutes, take it out in a bowl and keep it aside. (You can use sprouts instead of green peas or finely chopped boiled mix vegetables).

Step 2.

Now divide the dhokla batter into two equal parts in bowls, add salt in both the batters, add turmeric powder in one batter and mix it well.
Now add some water in both the batters and mix well now both the batters and stuffing is ready.

Step 3.

Now grease a tray with oil, add half teaspoon of eno and 1 tsp of oil in turmeric batter so dhokla will be fluffy, mix it well and shift the mixture to tray.

Step 4.

In a steamer heat water, when water starts boiling put the tray inside the steamer, cover it and let it steam for 3-4 minutes, now add half teaspoon eno in white dhokla batter and mix it well.

Step 5.

Now open the lid of steamer, put the vegetable stuffing on dhokla batter and spread it nicely, cover it and again cook it for 2-3 minutes so stuffing will stuck with dhokla.
After 2-3 minutes open the lid and put the third and final layer of white dhokla batter on stuffing, spread it nicely, sprinkle some pepper powder on it, again cover it and cook it for further few minutes.

Step 6.

For tempering heat 2 tbsp of oil, add whole dry red chillies, sesame seeds, mustard seeds, cumin seeds and cook it little.
Now check the dhokla buy dipping spoon or knife (if nothing comes out then it’s ready else cook it for further few minutes), now pour the tempering on dhokla and garnish the dhokla with some coriander leaves.

Step 7.

Take out the tray from steamer and let it cool at room temperature, now cut the dhokla into small pieces and enjoy the delicious sandwich dhokla.
