Kashmiri Dahi Baingan Recipe | Kashmiri Baingan Curry.

Kashmiri dahi Baingan is very delicious aromatic kashmiri curry recipe from kashmiri cuisine. This curry is fully rich in taste and flavors as it is focused spices based dish. Ingredients for Kashmiri Dahi Baingan:

100 gm Brinjals Cut in Long Strips.
50 gm Whipped Curd.
1 Medium Size Finely Chopped Onion.
1 tsp Garlic Paste.
½ tsp Cumin Seeds.
1 Piece of Cinnamon.
3-4 Cloves.
1 bay Leaf.
½ Piece of Myristica fragrans or Javintri.
4-5 Black Peppercorns.
2 Pieces of Star Anise.
Salt according to taste.
1/8 tsp Garam Masala.
Oil for frying brinjals.
2 tbsp Oil.

Ingredients for Dry Masala:

1 tsp Fennel Seeds.
1 tsp Coriander Powder.
1 tsp Sesame Seeds.
1 tsp Dry Ginger Powder.
1 tsp Red Chilli Powder.
½ tsp Turmeric Powder.
1 tbsp Peanuts.
Some Coriander Leaves for Garnishing.

How to Make Kashmiri Dahi Baingan:

Step 1.

First of all take a mixer jar and put in peanuts, fennel seeds, dry ginger powder, coriander powder, sesame seeds, red chilli powder, turmeric powder and grind well to make dry masala and keep aside.

Step 2.

Heat oil in a kadai, when oil gets hot put brinjals in hot oil and fry them till become soft then take out in plate and keep aside.

Step 3.

Now heat oil in non stick pan, when oil gets little hot add in bay leaf, cloves, peppercorns, Star Anise, Myristica fragrans, cinnamon and cumin seeds, let the spices crackle.

Step 4.

Now add in onions and cook till become transparent then add in garlic paste and saute for little time, now add in dry masala prepared from dry spices and cook for 1 minute then add in about ½ cup water and salt according to taste.

Step 5.

Now add in fried brinjals and cover and cook for 3-4 minutes, after 3-4 minute open the lead and add in whipped curd, again cover and cook for 2 minutes, after 2 minutes add in garam masala, cover and cook for 1 minute more.

Step 6.

After 1 minute turn the heat off and take out the delicious kashmiri dahi Baingan in a serving plate and garnish with some coriander leaves and serve hot.
