In this recipe first of all the pastes are prepared then potatoes first fried separately till it became golden brown, the spices are cooked in medium hot oil which gives a mind blowing aroma then after fried potatoes are added to the spice mixture and cooked on little high heat and then the delicious recipe is ready to serve.

Ingredients For Kashmiri Dum Aloo:
600 gm Potatoes (Half cooked).
50 gm Cashew Nuts Paste.
50 gm Watermelon Seeds Paste.
3 tomatoes 1 Inch Ginger Paste.
1 tbsp Fresh Cream.
¼ tsp of Red Chilli Powder.
1 Small Stick of Cinnamon.
1 Small Piece of Mace.
2 Pods Cardamom.
3 Cloves.
7-8 Black Peppers.
½ tsp Cumin Seeds.
¾ tsp of Coriander Seeds Powder.
¾ tsp of Fennel Seeds Powder.
½ tsp of Turmeric Powder.
¼ tsp of Cardamom Powder.
¼ tsp of Amchoor.
¼ tsp of Garam Masala.
Pinch of Asafoetida.
Some Fresh Coriander Leaves.
Oil.

How to Cook Kashmiri Dum Aloo:

Step 1.
Heat oil in a pan, when its get heated fry potatoes until it became golden brown.

Step 2.
Put 2 tbsp of oil in a pressure cooker, when it gets heated add asafoetida, turmeric powder and dry spices in it and stir it very well.
Now add coriander powder, fennel seeds powder and red chilli powder and again give it a nice stir.

Step 3.
Now add tomatoes and ginger paste and cover it and cook it for further few minutes at a medium low heat.

Step 4.
Now add cashew nuts and watermelon seeds paste and roast it for few minutes at a medium low heat.

Step 5.
Add fresh cream in it.
Start adding water in it (don’t add water at once) and cook it at a medium low heat.

Step 6.
Add fried potatoes in it and mix it nicely with other ingredients.
Now add salt, garam masala, amchoor, cardamom powder and mix it very well.(Add water as per your requirement).

Step 7.
Cover the pressure cooker and cook it at high heat and turn the heat just before it blow the vessel.
Now let it cook on steam created in pressure cooker, open the pressure cooker after few minutes.

Step 8.
Serve the delicious Kashmiri dum aloo and garnish it with some fresh coriander leaves.
