Malai kofta is yet another popular Indian curry recipe from punjabi cuisine. It is restaurant style Indian dish exclusively available in most of the restaurants and dhabas. It’s a bit time taking curry but tastes really awesome and mind blowing. For making this creamy, tasty and temping punjabi curry koftas and gravy both are prepared separately then served together. Mainly it is prepared from paneer, some dry fruits, cream, milk and some other spices.

All the required ingredients to make this simple malai kofta recipe are very simple and commonly available in grocery shops and markets. Paneer used in this creamy and delicious curry is homemade but you can also buy from markets. But if you use homemade paneer then surely taste will be very unique and tempting. Sweetness is also very important in making this dhaba style malai kofta, here we have added about 2 and half teaspoon but if you like little more sweetness then you can add little more or as per your taste.

There are many variation in making this malai kofta from place to place and as per the likewise of ingredients. Here we do not used onion and garlic but if you like then you can boil and make paste of onions and use in gravy. Here you will see this recipe with very simple step by step instructions and video recipe option so you can make it at your home without any difficulties and hustles. Ingredients for Malai Kofta:

For Kofta:

350 gm Home Made Paneer or Cottage Cheese.
7-8 Chopped Cashew Nuts.
7-8 Chopped Almonds.
15 Raisins.
¼ tsp Black Pepper Powder.
1 tsp Cardamom Powder.
3 tbsp Corn Starch.
Salt as per taste.
Oil for frying.

For Gravy:

1 Cup Boiled Cashew Nuts Paste.
1 Cup Cream.
1 Cup Milk with added 2 bread slices and grinded to fine paste.
2 ½ tsp Sugar.
5 Green Cardamoms.
2 Bay Leaves.
1 tsp Ginger Paste.
Salt as per taste.
2 tbsp Oil.

How to Make Malai Kofta:

Step 1.

First of all for making koftas dry roast the almonds, cashews and raisins for just 1-2 minutes in a pan then take out in a bowl.

Step 2.

Now take paneer in a big plate then add in about 1 or 1 ½ tbsp corn starch and mash both well with hands, now add in about 1/8 tsp pepper powder, little bit salt and pinch of cardamom powder and again mash it well.

Step 3.

Now make small size of koftas from mashed paneer, take one paneer ball and with help of fingers make thick flat puri then put some dry roasted almonds, cashews and raisins then cover it and make kofta ready, make all the koftas ready similarly.

Step 4.

Now heat oil in kadai, roll the koftas on corn starch then remove the excess corn starch so there will be a very thin layer of corn starch on koftas, when oil gets hot put koftas in oil and fry till become light golden brown.

Step 5.

Stir the koftas continuously so they don’t get burnt and cook nicely, while frying oil should be medium hot, now take out the koftas in a plate and keep aside.

Step 6.

Now for making gravy heat oil in pan, when oil gets little hot add in bay leaves, green cardamoms and roast both for few seconds then add in ginger paste, cashews paste and cook it for few minutes at medium heat.

Step 7.

When cashews paste get cooked and releases oil add in cream and mix well then add in milk and bread paste and again mix well, now add in about 1 tsp cardamom powder and little bit of water.

Step 8.

Now add in sugar and mix well and cook for few minutes, when gravy seems to start boiling turn the heat off, add and mix little bit salt and take out the gravy in a serving bowl.

Step 9.

Now put the koftas in gravy and garnish it with some almonds, cashews, raisins and cardamom powder and serve hot.
