Patra is a very popular and delicious gujarati breakfast recipe to have in morning. Taste of this patras is really very amazing and mind blowing little sweet, sour and moderate spicy. Mainly it is prepared from colocasia leaves, hanwa dhokla flour, gram flour, curd, sugar and some other spices. For making this paatra you have to choose fresh and green colocasia leaves as they give a nice taste. This is not just a delicious one but nutritious and good for health too.

This quick patra tastes really awesome when deep fried but some people cook by steam and shallow fry, here we have cooked this in a steamer and it really come out amazing. You can make this gujarati patra for morning breakfast or evening snack and enjoy with tomato ketchup or any chutney of your choice. It also goes good with a hot cup of tea or coffee. This patras are also very famous in Maharashtra and there it is well known as alu vadi or aloo vadi but there is no potato used in this recipe.

This colocasia leaves are known as arbi ke patte or arvi ke patte in Hindi and are commonly available in grocery shops. For making this paatra taste delicious two things are very important they are roll them tightly and second don’t forget the tempering. Along with this you may also like some other popular gujarati recipes like rasiya dhokla, rice thepla, khaman dhokla, gujarati handwo etc…….

Ingredients for Patra:

250 gm Colocasia Leaves or Arbi ke Patte.
50 gm Handwa Dhokla Flour.
4 tbsp Gram Flour.
1 tsp Ajwain.
2 tbsp Curd or Yogurt.
1 tbsp Sugar or Jaggery.
½ tsp Turmeric Powder.
1 tbsp Garlic Chilli Paste.
½ tsp Red Chilli Powder.
Salt according to taste.
1 tsp Oil.
Some Coriander Leaves and Fresh Coconut for Garnishing.

For Tadka or Tempering:

1 tsp Sesame Seeds.
1 tsp Mustard Seeds.
2-3 tbsp Coconut Water.
2-3 tbsp Water.
1 tsp Sugar.
1 tbsp Oil.
Salt according to taste.

How to Make Patra:

Step 1.

First of all wash and wipe the colocasia leaves well then remove the thick stalk of leaves and keep aside.

Step 2.

Now take handwa dhokla flour in a bowl then add in gram flour, salt, turmeric powder, ajwain, red chilli powder, curd, sugar or jaggery, garlic chilli paste and oil.

Step 3.

Now add in water as per required and make nice batter from it, make sure that consistency of batter should be little thick and can be spread nicely.

Step 4.

Now take a colocasia leaf and apply batter on it then put another leaf on it, again apply batter of this leaf and cover with another leaf, do this with 6-8 leaves.

Step 5.

Now stick both the ends of leaves then roll it tightly, do this from entire batter and leaves and make patra ready this way.

Step 6.

Now put all the patras in a steamer and stem them for 10-12 minutes, after 10-12 minutes check the patra with knife if knife comes out clean then patra is ready or else cook for further few minutes.

Step 7.

Now take out the patra rolls in a plate and let them cool then cut them in round shape and put in a serving plate.

Step 8.

Now heat oil in a tadka pan, when oil gets hot add in mustard seeds and let them slather, now add in sesame seeds and it also slather then add in coconut water along with normal water.

Step 9.

Now add in sugar and cook till sugar melts, now tadka is ready put this onto the round shape patras and garnish with some coriander leaves and fresh coconut, serve the delicious gujarati patra hot and enjoy.
