Punjabi Baingan ka Bharta Recipe.

                     Baingan bharta is an all time favorite sabji/curry of every Indian. Especially Punjabi Baingan ka bharta has very much popular in all over India. Usually most of people like the Punjabi dishes as it is made with lots of spices and very delicious in taste. It is one of the most popular and tasty curry derived from that cuisine.

                    Baingan bharta is so easy to make that one can make it at any time. Even for guests and friends also. All the commonly required ingredients are like eggplant, tomatoes, onions and some Indian spices which are very easily available at any stores. It is often made at Punjabi homes and enjoyed with phulka, roti or Nan.

                   In Punjab, eggplants are to be roasted in tandoor which gives it a smoky flavor. But if you don’t have tandoor, you can roast it on open flame, which also will give a perfect smoky flavor and taste. With this Punjabi curry recipe, you can also check some more Punjabi dishes like dal makhani, veg biriyani and dal tadka and jeera rice.

Ingredients for Punjabi Baingan ka Bharta:

2 Big Brinjal or Eggplants.
1 ½ Cup Finely Chopped Onions.
2 Cup Finely Chopped Tomatoes.
1 tsp Finely Chopped Garlic.
1 tsp Finely Chopped Ginger.
5-6 Curry Leaves.
1 tsp Mustard Seeds or Rai Dana.
1 tsp Cumin Seeds.
Pinch of Asafoetida.
1 ½ tsp Red Chilli Powder.
2 tsp Coriander Powder.
½ tsp Turmeric Powder.
1 tsp Garam Masala.
2 tbsp Finely Chopped Coriander Leaves.
Salt according to taste.
5-6 tsp Oil.

How to Make Punjabi Baingan ka Bharta:

Step 1.

First of all wash the brinjals in running water nicely then wipe with clean cloth, now make 5-6 cuts on every brinjal and apply oil on them.
Now put the brinjals on gas in open flame and roast them for 2-3 minutes, turn the sides after every 30 seconds otherwise they will burn.

Step 2.

Now take them off from flame and put them in water to cool, after that peel the skin and chop them in small pieces.

Step 3.

Now heat oil in a nonstick pan and add cumin seeds, mustard seeds and asafoetida, wait till they starts slathering.
Now add onions, curry leaves and garlic and let it cook till onion become transparent.

Step 4.

Now add tomatoes along with salt and cook it till become soft, when tomatoes become soft add red chilli powder, turmeric powder, coriander powder, garam masala and ginger.
Mix all the spices well and cook them for 2 minutes at medium heat.

Step 5.

Now add brinjals and mix well with other spices and ingredients and cook it for 10 minutes at medium low heat.
After 10 minutes turn the heat off and garnish it with coriander leaves and serve with roti chapatti or jeera rice and enjoy.
