Punjabi Chole Masala Recipe | Chickpeas Curry.

Punjabi chole masala or punjabi chole is one of the very delicious and irresistible north Indian curry recipe. Mainly it is prepared from chickpeas, tomato ginger puree and some spices. In most of the north Indian restaurants and dhabas you will find this mind blowing and fabulous curry along with punjabi breads. You can make this north Indian curry for your lunch or dinner and have it with roti, paratha or naan whichever you like.

For making this curry more flavorful and delicious there is one trick and that we have mentioned in notes and let me know you here also. When you soak the chickpeas take one clean cloth put some whole dry spices like 5-6 pieces of gooseberry, 1 inch cinnamon, 3 cloves, 1 big cardamom and 1 tsp tea. Tie it tightly and put in water along with salt by doing this chickpeas will definitely taste yum.

Ingredients for Punjabi Chole Masala:

350 gm Boiled Chickpeas (Soaked in Water for 1 Night).
2 Tomatoes and 1 Inch Ginger Puree.
1 tbsp Roasted Cumin Seeds.
½ tsp Fennel Powder.
½ tsp Coriander Powder.
½ tsp Garam Masala Powder.
¼ tsp Red Chilli Powder.
½ tsp Cumin Seeds.
½ tsp Ajwain.
½ tsp Amchoor.
2 Chopped Green Chillies.
Pinch of Asafoetida.
Salt as per taste.

How to Make Punjabi Chole Masala:

Step 1.

First of all heat around 2 ½ tbsp oil in a kadai, when oil gets heated add in cumin seeds, ajwain, fennel powder, coriander powder, asafoetida, red chilli powder, green chilli and tomato puree.

Step 2.

Mix all the ingredients well then add salt and cook till tomatoes get cooked, when tomatoes get cooked add in chickpeas and mix well.

Step 3.

Now add garam masala, amchoor, little water (add boiled water in which chickpeas are boiled), mix well and mash chickpeas with soft hands so the gravy will be nice in consistency then add roasted cumin seeds and mix well.

Step 4.

Now cover and cook it for around 5 minutes at medium low heat, stir it after 2 minutes, after 5 minutes open the lead stir well and delicious punjabi chole masala is ready to serve.
