This is really very simple and easy to make ragda patis recipe and requires very less time to cook is well, only you have to soak the pigeon peas overnight. For making this yummy and delicious street food item ragda and pattice both are separately cooked then assembled together.

Te taste of this quick ragda patties depends on the chutneys used and chutney enhances the overall taste of this dish. Here we have used three different kinds of chutneys, one is sweet other one is spicy and third one is tangy so you can get a good punch of different taste in one. Ingredients for Ragda Patties:

For Ragda:

100 gm Dried Pigeon Peas.
1 Medium Size Finely Chopped Onion.
1 Medium Size Chopped Tomato.
¼ tsp Red Chilli Powder.
¼ tsp Garam Masala.
1 tsp Coriander Leaves.
¼ tsp Turmeric Powder.
1 tbsp Ginger Garlic Chilli Paste.
Salt According to taste.
2-3 tsp Oil.

For Patties:

200 gm Boiled Potatoes.
1 tbsp Ginger Garlic Chilli Paste.
1/8 tsp Turmeric Powder.
½ tsp Chaat Masala.
2-3 tbsp Corn Flour.
1 tbsp Bread Crums.
¼ tsp Red Chilli Powder.
2-3 tbsp for Shallow Frying Patties.
Salt according to taste.

Other Ingredients:

Jaggery Tamarind Chutney as per required.
Green Chutney as per required.
Garlic Chutney as per required.
Finely Chopped Onion as per required.
Nylon Sev as per required.
Some Coriander Leaves for Garnishing.

How to Make Ragda Patties:

Step 1.

First of all soak the dried pigeon peas for overnight then add in little bit of salt and turmeric powder and pressure cooker them for 1-2 whistles.

Step 2.

Now heat oil in a non stick pan, when oil gets heated add in onions and cook till become light pink, now add in ginger garlic chilli paste and saute for little time then add in tomatoes and cook till become soft.

Step 3.

Now add in red chilli powder, turmeric powder, salt and other spices and cook it for little time, now add in pigeon peas, garam masala and water as per required and cook for further few minutes at medium low heat, this way ragda will be ready.

Step 4.

For making patties take a mixing bowl add in boiled potatoes and smash them well then add in turmeric powder, salt, ginger garlic chilli paste, chaat masala, bread crums, red chilli powder and smash all the spices well.

Step 5.

Now make small sizes of patties from potato mixture then roll the patties on corn flour, now shallow fry the patties both sides in hot ghee.

Step 6.

Now take a serving plate or bowl first add in hot ragda then put patties on ragda, now put little green chutney, jaggery tamarind chutney and garlic chutney.
Now garnish it with some nylon sev, finely chopped onions and coriander leaves and serve.
