Shaam savera is a world famous curry recipe or singnature dish of a very popular Indian chef Sanjeev Kapoor, it is rich in vitamins, proteins and other nutrients. Shaam savera is nothing but a spinach and paneer kofta in a tomato sauce or gravy. Mainly this yummy tummy and delicious curry is prepared from spinach or palak, paneer or cottage cheese, corn flour, garlic cloves, chillies, tomato puree and some other spices.

For making this restaurant style Indian curry koftas and gravy are prepared separately then served together. As you all guys know about spinach and its healthy benefits and for being healthy I must say spinach should be used once in a week. This curry is a bit time taking so you can prepare this in weekends or for any special occasions or for get together. If you use fresh homemade paneer and cream then its goaana be a good for you or else you can buy from grocery shops also.

All the required ingredients to make this easy shaam savera curry are very simple and commonly available in grocery shops and markets. Here you will see this shaam savera gravy with very simple step by step instructions so you can make it at your home without any difficulties and hustles. Ingredients for Shaam Savera:

For Kofta:

100 gm Paneer or Indian Cottage Cheese.
500 gm Spinach Leaves.
2 tbsp Corn Flour.
1 tbsp Finely Chopped Garlic.
1 tbsp Finely Chopped Green Chillies.
Salt as per taste.
Oil for Frying.

For Gravy:

1 Cup Tomato Puree.
1 tsp Kasuri Methi.
1 tsp Coriander Leaves.
½ tsp Sugar.
1 tsp Red Chilli Powder.
4-5 Cloves.
2 Pieces of Cinnamon.
½ Flower of Javitri.
Salt as per taste.
1 tbsp Butter.
1 tbsp Home Made Cream.
1 tbsp Oil.

How to Make Shaam Savera:

Step 1.

First of all for making kofta put the spinach in boiling water along with salt and pinch of soda and cook for 1-2 minutes, after 1-2 minutes take out spinach from boiling water and put in cold water.

Step 2.

Now squeeze the spinach well so all the water will remove, make sure that there is no water left after squeezing, now chop the spinach finely then put in bowl.

Step 3.

Now add in salt, garlic, green chilli, corn flour and mix well all the ingredients and make dough from it and keep aside.

Step 4.

Now take fresh paneer in a bowl then add little salt and mash it well with spoon then make small balls from it.

Step 5.

Now first take spinach mixture and make small tikkis or cutlets then put one paneer ball at the centre of every tikki then put some spinach mixture on paneer ball and cover it well, make all the koftas ready this way.

Step 6.

 Now heat oil in a kadai, when oil gets heated put the koftas in medium hot oil and fry for little time then take out in a plate and let them cool then cut all the koftas from centre into two parts.

Step 7.

Now for making gravy heat oil and butter in a pan then add in cinnamon pieces, cloves, javintri flower and roast the spices for little time.

Step 8.

Now immediately add in tomato puree, salt, sugar, red chilli powder and about ¼ cup of water, now cover and cook the gravy at medium heat till starts boiling.

Step 9.

When tomato puree gets cooked remove the lead and add in cream, kasuri methi, coriander leaves and cook it for further 1-2 minutes and then turn the heat off.

Step 10.

Now take out the gravy or sauce in a serving plate then put the koftas on gravy and serve, delicious and yummy shaam savera is ready to serve.
