Shankarpali Recipe | Marathi Snack Recipe.

                             Shankarpali is a quick, crunchy snack comes from western Indian cuisine. It is also known as shakarpara in Gujarat and as shankarpali in Marathi. Richness of carbohydrates, make it a perfect source of instant energy. It is crunchy, crackly snack that is usually served at Indian blockbuster festivals like diwali and janmashtmi.

                           This easy shankarpali quickly remembers the days of our childhood. Made from some of few increments, it is perfect for breakfast, snack time or as a midnight snack also. This shankarpali can be varying by many ingredients; it tastes upon, how it is made. The dough for shankarpali is predominately made from plain flour, milk, sugar and water and cut in to a diamond shapes. Sometimes, slightly fried rawa is to be added for experimentation.

                       Because of long shelf, it can be store for longer time. So it can be taken with picnic or tour also. It is widely available at the farshan shops of Gujarat and Maharashtra. It is a good tea time snack, with custom. These slightly flaky, crispy snacks melt in mouth at every bite.

                      It is a tradition to make shankarpali at festival of diwali in Gujarati and Marathi houses.  Along with shankarpali, there is some more dishes that is made in Gujarati houses during diwali like mesub, gulab jamun, aloo bhakharwadi and chili fritters.  

Ingredients for Shankarpali:

1 ½ Cup Maida.
¼ Cup Powdered Sugar.
1/3 Cup Milk.
½ tsp Cardamom Powder.
Salt to taste.
2 tsp Oil.
Oil for deep frying.

How to Make Shankarpali:

Step 1.

First of all in a deep pan warm up the milk then add sugar and cardamom powder in it and keep aside.

Step 2.

In another large bowl add maida, pinch of salt and 2 tsp hot oil and mix well, put this in milk and sugar mixture.

Step 3.

Mix it well and knead into stiff dough and not too soft or sticky, there is no need to rest dough.

Step 4.

Now make two equal portions of dough, roll it like roti but it should be 2-3 times thick then chapatti, roll it gently as the dough is stiff.
You will see the cracks when you roll the dough so don’t worry just seal it with your fingers and roll again, with the help of knife cut the roti into square or diamond shape.

Step 5.

Now heat oil in pan for deep frying at medium heat, fry the shankarpali one by one batch, keep turning sides in between, fry them till become golden brown on both the sides on slow heat.
Now remove them in tissue paper and allow it to cool and then store in an air tight container at room temperature.
