Sooji ka halwa or semolina halwa is an authentic and traditional Indian sweet or dessert recipe. This quick sooji ka halwa can be prepared in a very quick time and one of the best thing is that all the required ingredients for this yummy dessert dish are very few, simple and commonly available in almost every kitchen of the world. In India this halwa recipe is specially prepared at the time of Navratri festival at 8th or 9th day along with dry black chana and pooris for Kanjak Pooja. Usually kids don’t eat the healthy food but you can make this for your kids because kids love the sweets and dessert more and eat with joy. Ingredients for Sooji ka Halwa:

½ Cup Sooji or Semolina.
½ Cup Sugar.
1/3 Cup Pure Ghee.
10-12 Raisins.
2 tsp Almond Powder.
¼ tsp Cardamom Powder.
6-7 Strands of Saffron.
1.5 Cup Water (or 2 cup depending on how much water sooji takes).
5-7 Grated Almonds (For Garnishing).

How to Make Sooji ka Halwa:

Step 1.
First of all put 2 cups of water for boiling, in a different pan add ghee and put on gas.

Step 2.
Add sooji in ghee and roast it till become golden brown.

Step 3.
Once water starts boiling, take out ½ cup and keep separately, add sugar in remaining water and heat till sugar melts.
Switch off the gas (of water) once sugar melts, do not stir it in between so sugar does not stick to bottom.

Step 4.
Now add saffron in sooji once it is roasted (it takes about 5-7 minutes).
Switch off the gas and add water very slowly (it will jump out), after adding water switch on the gas again.

Step 5.
Now add almond powder, raisins, cardamom powder and mix it well.
Now cover it and cook it for one and a half minutes then add remaining half cup water ONLY if required.

Step 6.   
Switch off the gas and leave for 2 minutes then uncover and switch on the gas for 15-20 seconds keep stirring till it has a glow/ radiance.
Switch off gas and take it out in a serving plate, garnish it with grated almonds and serve.
