Stuffed Karela Recipe.

Stuffed karela or stuffed bitter gourd recipe is north Indian curry which is very popular in entire India but a very few people love this curry. Just a single reason because of the bitter taste of karela. If you love the bitter gourd then definitely you will goanna enjoy this punjabi curry. It is really very simple and easy to make plus requires very less time to cook is well. I personally like the bitter gourd and we oftenly cook it at home.

Usually this quick stuffed karela goes good with roti and chapatti but you can also have it with any other breads of your choice. In India people makes many different varieties of recipes using bitter gourd. Mainly this bharwa karela is prepared from bitter gourd, peanuts, sesame seeds, ginger, garlic and some other spices. And all the required ingredients to make this masala karela subzi are very simple and commonly available in grocery shops and markets.

Ingredients for Stuffed Karela:

250 gm Small Bitter Gourd.
3 tbsp Peanuts.
3 tbsp Sesame Seeds.
2 Pieces of 1 Inch Ginger.
2-3 Green Chillies.
8-10 Garlic Cloves.
½ tsp Turmeric Powder.
½ tsp Red Chilli Powder.
1 tsp Cumin Seeds.
1 tsp Shahi Garam Masala.
2 tsp Gram Flour.
Salt According to taste.
6 tbsp Oil.

How to Make Stuffed Karela:

Step 1.

First of all wash the bitter gourds then peel the upper layer or skin of them, make sure that peel only a bit upper skin.

Step 2.

Make a cut in all the bitter gourd and take out seeds in a bowl and keep aside, keep the scooped bitter gourds in another bowl.

Step 3.

Now take a mortar and first put bitter gourd seeds in it then add in ginger, garlic, green chillies, red chilli powder, shahi garam masala, peanuts, sesame seeds, cumin seeds, turmeric powder and salt.

Step 4.

Now with the help of pestle crush all the spices and ingredients coarsely, now the stuffing mixture is ready.

Step 5.

Now heat 2 tbsp oil in a non stick pan, when oil gets heated add in stuffing mixture and saute it at low flame till water is soaked or evaporated.

Step 6.

Now add in gram flour and saute it for further few minutes then turn the heat off and take out the stuffing in a bowl and let it cool.

Step 7.

Now stuff all the bitter gourds with stuffing, now heat 4 tbsp oil in a kadai, when oil gets little hot put all the stuffed karela in kadai, now sprinkle some salt on them, cover and cook for few minutes.
Stir them in between, when all the karela get cooked turn the heat off and take out in a serving plate and serve hot.
