Ingredients for Vegetable Upma:

1 Cup Sooji or Semolina.
1 Chopped Onion.
2 Finely Chopped Green Chillies.
1 Inch Finely Chopped Ginger.
1 Medium Size Chopped Carrot.
½ Chopped Capsicum.
¼ Cup Fresh Peas.
1 Small Tomato (Optional).
4-5 Beans.
½ tsp Oil or Ghee.
Salt to Taste.

For Seasoning:

2 ½ tbsp Oil.
1 tsp Mustard Seeds.
1 tsp Urad Dal.
1 tsp Chana Dal.
1-2 Red Chillies.
Pinch of Asafoetida.
Few Coriander Leaves.
A Sprig of Curry Leaves.

Preparations:

Step 1.
Dry Roast the sooji until hot to touch, it will give nice aroma.

Step 2.
Chop all the vegetables finely and keep it aside.

How to Cook Vegetable Upma:

Step 1.
First of all heat oil in a pan, when it gets heated add mustard seeds, when mustard seeds sizzles add urad dal, chana dal, red chillies, asafoetida and curry leaves.

Step 2.
When urad dal and chana dal becomes brown add finely chopped onions and saute it till becomes transparent.

Step 3.
Now add ginger, green chillies and saute it for few more minutes.

Step 4.
Now add all the vegetables, cover it and cook it for 2-3 minutes, don’t overcook it.

Step 5.
Now add 2 cups of water, needed salt and bring it to boil, when it starts boiling add ½ tsp of ghee.
Taste the water to check salt, if it is slightly salty, it will be perfect, or not.

Step 6.
Once we add raw reduce the heat to low, add sooji gradually with one hand and stir continuously with other hand, so that it does not form lumps.

Step 7.  
Cover and cook on low heat, once the water is absorbed, mix well and cook covered on low heat for 5-6 minutes, stirring in between.

Step 8.
Delicious rawa vegetable upma is ready to be served, sprinkle some chopped coriander leaves and serve hot with any chutney of your choice.
