Ingredients

  • For Ragda:
  • 50 gm Cooked Dry Green Peas.
  • 2 tbsp Finely Chopped Onions.
  • 2 tbsp Finely Chopped Tomatoes.
  • 1 tbsp Ginger Garlic Chilli Paste.
  • ¼ tsp Turmeric Powder.
  • ¼ tsp Red Chilli Powder.
  • 1/8 tsp Garam Masala.
  • Salt as per taste.
  • 1 tbsp Oil.
  • For Puri:
  • ½ Cup All Purpose Flour.
  • ½ Cup Wheat Flour.
  • Salt as per taste.
  • 1 tbsp Oil.
  • Oil for frying.
  • For Kokum Chutney:
  • 3 tbsp Kokum.
  • 2 tbsp Jaggery.
  • Salt as per taste.
  • For Green Chutney:
  • 5-6 Green Chillies.
  • Salt as per taste.
  • ½ tsp Lemon Juice.
  • Other Ingredients:
  • Some Thinly Chopped Onions.
  • Some Besan Sev.
  • Some Chaat Masala.

Instructions

  • First of all for making Kokum chutney soak the kokum in lukewarm water for 5 minutes then put kokum in a mixer blender jar along with salt, jaggery and about 2-3 tbsp and blend well, Kokum chutney is ready.
  • Now for making green chutney put green chillies, lemon juice, salt and 1 tbsp water in a mixer blender jar and blend it well, green chutney is ready.
  • For making puris take all purpose flour and wheat flour in a bowl then add in salt, oil and mix well, now add water as per required and knead dough from it, keep the dough aside for 5 minutes.
  • Now put the oil in kadai and turn the gas on, now roll out the puris from dough and fry in hot oil then keep the puris on one another so they can be soft, puris are ready.
  • For making ragda heat oil in kadai, when oil gets heated put onions and cook it till become soft then add in tomatoes and cook tomatoes till get soft.
  • Now add in ginger garlic chilli paste and saute for little time then add in salt, turmeric powder, red chilli powder, cooked dry green peas and some water, mix all the spices and ingredients well.
  • Now smash the green peas with the help of smasher and cook for about 5 minutes, after 5 minutes turn the heat off and ragda is ready.
  • Now first put puris in a serving plate the put ragda on every puri, now put some kokum chutney and green chutney on ragda then sprinkle some chaat masala, now put some raw onions and besan sev, this way delicious and mouth clicking aloo puri surat style is ready.
