First of all heat butter in a kadai then add in corns, capsicum, onions and saute all the veggies for little time.
Now add in green chillies, garlic paste and saute for little time then add in salt as per taste and garlic herbs.
Saute stuffing for further few minutes then take out in a bowl, sprinkle some coriander leaves or parsley and keep stuffing aside to cool.
Now heat tawa then put some butter on it, now put half cooked roti on it then put some stuffing on half part of roti and on other half put about 2 tbsp mozzarella cheese.
Now make a cut in roti and fold it then cook it both sides till become crispy, similarly cook other roti then take out in a serving plate and cut delicious veg quesadilla into triangle shape and serve.
