First of all for making koftas dry roast the almonds, cashews and raisins for just 1-2 minutes in a pan then take out in a bowl.
Now take paneer in a big plate then add in about 1 or 1 ½ tbsp corn starch and mash both well with hands, now add in about 1/8 tsp pepper powder, little bit salt and pinch of cardamom powder and again mash it well.
Now make small size of koftas from mashed paneer, take one paneer ball and with help of fingers make thick flat puri then put some dry roasted almonds, cashews and raisins then cover it and make kofta ready, make all the koftas ready similarly.
Now heat oil in kadai, roll the koftas on corn starch then remove the excess corn starch so there will be a very thin layer of corn starch on koftas, when oil gets hot put koftas in oil and fry till become light golden brown.
Stir the koftas continuously so they don’t get burnt and cook nicely, while frying oil should be medium hot, now take out the koftas in a plate and keep aside.
Now for making gravy heat oil in pan, when oil gets little hot add in bay leaves, green cardamoms and roast both for few seconds then add in ginger paste, cashews paste and cook it for few minutes at medium heat.
When cashews paste get cooked and releases oil add in cream and mix well then add in milk and bread paste and again mix well, now add in about 1 tsp cardamom powder and little bit of water.
Now add in sugar and mix well and cook for few minutes, when gravy seems to start boiling turn the heat off, add and mix little bit salt and take out the gravy in a serving bowl.
Now put the koftas in gravy and garnish it with some almonds, cashews, raisins and cardamom powder and serve hot.
