First of all heat oil in non stick pan then add in onions and cook till become light golden brown then add in ginger chilli paste and saute for 1 minute at medium heat.
Now add in turmeric powder, salt, red chilli powder, garam masala and mix well with onions then add in cooked chana dal (While cooking make sure that dal should not be broken it must be whole).
Now add in sugar, lemon juice and mix well then add in dry raisins and cover and cook it for 1 minute at medium heat.
After 1 minute turn the heat off and add in coriander leaves and take out the stuffing in a bowl and let it cool for few minutes.
When stuffing become cool take one samosa strip and fold it in triangle shape then put about 1 tbsp stuffing in space then apply all purpose flour slurry at the edges and seal nicely and make samosa, make all the samosas ready this way.
Now heat oil in a kadai at medium heat, when oil becomes hot put 3-4 samosas in oil and fry till become till become nice golden brown, while frying make sure that oil should be medium hot.
Fry all the samosas then take out in a serving plate and serve hot and enjoy.
