  • 1 Cup All Purpose Flour.
  • 3 tbsp Finely Chopped Coriander Leaves.
  • 1 tsp Dry Coriander.
  • ½ tsp Ajwain.
  • 1 tsp Sesame Seeds.
  • ½ tsp Red Chilli Powder.
  • 1/8 tsp Turmeric Powder.
  • Salt as per taste.
  • 2 tbsp Oil.
  • Oil for frying Mathari.


  • First of all sieve the all purpose flour in a bowl then add in turmeric powder, salt, ajwain, dry coriander, sesame seeds, oil, red chilli powder and mix all the spices well.
  • Now add in finely chopped coriander leaves and again mix well, now add in water as per required and make nice dough from it and keep the dough aside for 5 minutes.
  • Now put the oil in kadai and turn the gas on, now make small sizes of puris from dough, thickness of puri should be like of paratha then make small dots on every puri using folk spoon so it can be more crispy.
  • Now put all the puris in hot oil and fry them for little time or till get half cook then take out in a plate and keep aside for 10 minutes to cool.
  • Now again fry the puris this time fry them at medium flame till get completely cooked and crispy then take out in a serving plate and serve with hot cup of tea or coffee, by frying twice this coriander mathari will be more crispy.
