First of all take a mixer jar and put in peanuts, fennel seeds, dry ginger powder, coriander powder, sesame seeds, red chilli powder, turmeric powder and grind well to make dry masala and keep aside.
Heat oil in a kadai, when oil gets hot put brinjals in hot oil and fry them till become soft then take out in plate and keep aside.
Now heat oil in non stick pan, when oil gets little hot add in bay leaf, cloves, peppercorns, Star Anise, Myristica fragrans, cinnamon and cumin seeds, let the spices crackle.
Now add in onions and cook till become transparent then add in garlic paste and saute for little time, now add in dry masala prepared from dry spices and cook for 1 minute then add in about ½ cup water and salt according to taste.
Now add in fried brinjals and cover and cook for 3-4 minutes, after 3-4 minute open the lead and add in whipped curd, again cover and cook for 2 minutes, after 2 minutes add in garam masala, cover and cook for 1 minute more.
After 1 minute turn the heat off and take out the delicious kashmiri dahi Baingan in a serving plate and garnish with some coriander leaves and serve hot.
