First of all soak the dried pigeon peas for overnight then add in little bit of salt and turmeric powder and pressure cooker them for 1-2 whistles.
Now heat oil in a non stick pan, when oil gets heated add in onions and cook till become light pink, now add in ginger garlic chilli paste and saute for little time then add in tomatoes and cook till become soft.
Now add in red chilli powder, turmeric powder, salt and other spices and cook it for little time, now add in pigeon peas, garam masala and water as per required and cook for further few minutes at medium low heat, this way ragda will be ready.
For making patties take a mixing bowl add in boiled potatoes and smash them well then add in turmeric powder, salt, ginger garlic chilli paste, chaat masala, bread crums, red chilli powder and smash all the spices well.
Now make small sizes of patties from potato mixture then roll the patties on corn flour, now shallow fry the patties both sides in hot ghee.
Now take a serving plate or bowl first add in hot ragda then put patties on ragda, now put little green chutney, jaggery tamarind chutney and garlic chutney.
Now garnish it with some nylon sev, finely chopped onions and coriander leaves and serve.
