First of all heat in a kadai, when oil gets hot put sliced potatoes in and fry on medium flame till potatoes get cooked nicely, make sure that potatoes don’t get dark golden brown.
It will take around 4-5 minutes then take out in a kitchen napkin so excess oil will be soaked.
Now in another kadai heat around 2 tsp oil, add in cumin seeds and let them slather, now add in turmeric powder, fennel powder, coriander powder, red chilli powder, ginger, asafoetida and green chilli.
Quickly mix all the spices so they don’t get burnt.
Now add in tomatoes along with salt and mix well with spices, cook the tomatoes for couple of minutes, if you feel the gravy is dry then add small amount of water.
Now add in fried potatoes, garam masala, little water and mix well, now cover and cook for 2 minutes at medium flame.
After 2 minutes turn the heat off and take the curry in a serving plate and enjoy.
