First of all put boiled potatoes in bowl then add in chaat masala, black salt, roasted cumin and fennel seeds, red chilli powder and salt.
Mix all the things well and mash the potatoes nicely to make potato stuffing.
Now take all purpose flour dough and roll out puris from it, now take one puri and put around 1 tsp potato stuffing at centre, now fold the puri in moon shape and seal it nicely, make all the ghughara this way.
Now heat oil in pan, when oil gets heated fry the ghugharas till become light golden brown at medium flame then take out in paper napkin.
Now put ghughra in a serving plate and with the help of spoon make little space in them, then put little jaggery tamarind chutney, green chutney, garlic chutney, curd, masala peanuts, aloo sev in the space and garnish with coriander leaves and enjoy.
