For Making Dal:
Wash the chana dal properly and soak in water for 2 hours at least.
Now put dal in a pressure cooker along with ½ tsp salt and turmeric powder, now cover the cooker properly and cook till 1 whistle blow, after whistle blows cook it for 3-4 minutes then turn the heat off.
Now chop the tomatoes roughly little big in size then chop green chillies and half of ginger and make paste of this three, make the thin slices of half ginger and keep aside.
Now heat oil or ghee in a kadai, add in cumin seeds and asafoetida let them slather then add in turmeric powder, coriander powder, tomatoes, chilli paste and chopped ginger, cook all the spices till oil gets separated.
Now open the flame of pressure cooker and put the spices mixture in it, add water and red chilli powder if necessary and mix it well.
Now cover cook the dal at low heat for 2 minutes, after 2 minutes turn the heat off and add in garam masala and mix, dal is ready.
For Making Pakwan:
First of all sieve the all purpose flour and take out in big bowl, add in oil, cumin seeds, salt and mix well, now add in water as per required and make dough like a puri but it should be little harder than puri dough.
Make sure that dough should not too soft or hard, give rest to dough for at least 30 minutes.
After 30 minutes make small balls of equal sizes from dough, take one ball and roll it and make square shape puri, now with the help of knife make 8-10 dots on puri so it will not bloat.
Heat oil in a kadai, when oil become hot put puris in and fry on medium flame till become light golden brown then take out the puris in a paper napkin.
Now Serve the hot puris with hot dal and enjoy the dal pakwan.
