Take some fresh guavas, clean it, cut edges and black spots from it, chop it into chunks then boil the chunks with water and grind it to a fine puree.
Sieve the puree with muslin cloth to get rid of all the seeds.
Take the puree in a non stick pan and cook it, keep stirring continuously either it will burnt.
When the water evaporates from puree add the sugar and continue stirring, after sometime colour and mixture begins to thicken.
Add lime juice, ghee and continue mixing so you will get a nice shine and the lime set the cheese.
When mixture comes to jam consistency still you have continue to cook till the mix comes together and get layer on top and starts to leave the edges of the pan.
Grease a tray with some oil and spread this mixture evenly, keep aside and let it cool and set for a couple of hours before you slice it and enjoy.
Cut the guava cheese barfi into squares or any other shape.
