Method of Litti Dough:
In a big bowl sieve flour and keep in it, add ghee, baking soda, crushed ajwain, sugar and salt in flour then mix well with finger strips, it should be like bread crums.
Now beat curd and put in flour, knead a soft dough using luke warm water, now cover the dough and keep aside for 30 minutes. Now the dough is ready.
Method of Stuffing for Litti:
Take out sattu flour in a utensil put chopped ginger, green chillies, coriander, lemon juice, salt, cumin seeds, ajwain, mustard oil and amchoor in it.
Mix all the ingredients properly, if the pitthi seems dry then add little water to it, but do not add too much it should be bind when you make a ball. Now pitthi or stuffing is also ready.
Method of Litti:
First of all make medium sized ball from the dough, expand the ball with the help of your fingers 2 inch diameter.
Now make small ball from stuffing or pitthi, place on expanded dough and wrap it in the dough piece and close from all sides.
Press this stuffed pieces to flatten it a bit, now litti is ready to bake or fry.
Heat the tandoor, place the stuffed pieces of dough in the tandoor and cook it by turning all sides till they turn brown.
Method of Chokha:
Wash brinjals, make hole on it with knife then put garlic cloves on that hole and roast it on gas.
Allow them to cool then peel the skins, mash it with spoon and keep them in bowl.
Now add chopped tomatoes, spices, salt, oil and mix well, garnish with lots of coriander leaves, delicious litti chokha is ready.
Break the litti from centre, pour the ghee on it as you like, serve with chokha, green coriander chutney and enjoy.
