First of all put 2 cups of water for boiling, in a different pan add ghee and put on gas.
Add sooji in ghee and roast it till become golden brown.
Once water starts boiling, take out ½ cup and keep separately, add sugar in remaining water and heat till sugar melts.
Switch off the gas (of water) once sugar melts, do not stir it in between so sugar does not stick to bottom.
Now add saffron in sooji once it is roasted (it takes about 5-7 minutes).
Switch off the gas and add water very slowly (it will jump out), after adding water switch on the gas again.
Now add almond powder, raisins, cardamom powder and mix it well.
Now cover it and cook it for one and a half minutes then add remaining half cup water ONLY if required.
Switch off the gas and leave for 2 minutes then uncover and switch on the gas for 15-20 seconds keep stirring till it has a glow/ radiance.
Switch off gas and take it out in a serving plate, garnish it with grated almonds and serve.
