Heat oil in a pan, When its get heated add Colocasia or arbi and fry it until it become golden brown.
Take it out in a plate.
Again heat oil in a pan, when it gets heated add carom seeds and Asafoetida and roast it for few seconds.
Add turmeric powder, fennel seeds powder, coriander powder, red chilli powder, garam masala, Amchoor and salt to taste.
Mix all the ingredients very well and add few drops of water.
Add arbi and mix it very well and cover the arbi with entire spices.
If you feel that it is dry then add little water in it.
Cook it for further few minutes.
Now the yummy fried arbi ki subzi is ready, serve it hot.
